The given values for minerals and trace elements are total
contents of the specific metals or ions.
Concerning iodine, values often show a considerable variation.
This results in imprecise average contents. Likewise, the average
values cannot be taken as a mark of the iodine content in a
specific food.
The content of sodium, potassium, calcium, magnesium,
phosphorous, copper, zinc and manganese is expressed as mg/100 g
edible part, whereas iodine, chromium, selenium, and nickel is
expressed as μg/100 g edible part.
